Curry Chickpea/Tuna Lettuce Wraps

Ingredients (For 2)

  • 1 can chickpeas (~240g) or tuna canned in water
  • ½ red bell pepper, chopped
  • ½ medium red onion, minced
  • ¾ tsp. curry powder
  • 1 tsp. maple syrup
  • 3 tbsp. Greek / dairy-free yogurt
  • Pinch of salt to taste
  • 8 large lettuce leaves of choice
  • Mint or coriander

 

Method

  1. Mash the chickpeas in a large bowl. Mix chickpeas or tuna with remaining ingredients.
  2. Divide the mixture between the lettuce leaves and garnish with chopped mint or coriander.
