Ingredients (For 2)
- 1 can chickpeas (~240g) or tuna canned in water
- ½ red bell pepper, chopped
- ½ medium red onion, minced
- ¾ tsp. curry powder
- 1 tsp. maple syrup
- 3 tbsp. Greek / dairy-free yogurt
- Pinch of salt to taste
- 8 large lettuce leaves of choice
- Mint or coriander
Method
- Mash the chickpeas in a large bowl. Mix chickpeas or tuna with remaining ingredients.
- Divide the mixture between the lettuce leaves and garnish with chopped mint or coriander.
