Ingredients (For 2)
- ½ onion
- 3 cups (90g) baby spinach
- ½ red bell pepper
- 2 cloves garlic
- 2 tsp oil
- 1 block (400g) firm tofu/taukwa, crumbled up
- ¾ tsp. ground turmeric
- ¼ tsp. salt (black salt is best for this)
- 2 tsp. maple syrup
- ½ avocado
- 1 tomato, sliced
- Lime wedges
- Black pepper
Method
- Chop the onion, baby spinach, red bell pepper, and garlic.
- Heat oil in a pan over medium heat. Add in tofu, turmeric, salt, vegetables, and maple syrup. Sauté for 5-8 minutes until the vegetables have softened.
- Divide between 2 plates and serve with avocado, tomato, a squeeze of lime juice, and black pepper to taste.
