Scrambled Tofu

Ingredients (For 2)

  • ½ onion
  • 3 cups (90g) baby spinach
  • ½ red bell pepper
  • 2 cloves garlic
  • 2 tsp oil
  • 1 block (400g) firm tofu/taukwa, crumbled up
  • ¾ tsp. ground turmeric
  • ¼ tsp. salt (black salt is best for this)
  • 2 tsp. maple syrup
  • ½ avocado
  • 1 tomato, sliced
  • Lime wedges
  • Black pepper

 

Method

  1. Chop the onion, baby spinach, red bell pepper, and garlic.
  2. Heat oil in a pan over medium heat. Add in tofu, turmeric, salt, vegetables, and maple syrup. Sauté for 5-8 minutes until the vegetables have softened.
  3. Divide between 2 plates and serve with avocado, tomato, a squeeze of lime juice, and black pepper to taste.
